Green Chili Stew

2 lbs. lean round beef or pork (pork) 2 tbsp. oil
3 med. potatoes, diced (1/2' - 3/4") 1/2 C. chopped onions

2 garlic cloves, minced
6 green chili peppers (Anaheim or Hatch green chilis, not jalapenos) 1/2 tsp oregano
2 tsp. salt

Prepare fresh green chili's (roast, peel, remove seeds, chop).
Cube meat, sprinkle with salt and brown in oil.
Add potatoes, onion, garlic, chili, oregano and enough water to cover. It should have a soupy consistency.
Simmer until potatoes are done (30-45 minutes), adding water if necessary.

Beans

The bean recipe is in Mary Ann's head. From what she tells me: (1) Cook beans (pinto) until soft.
(2) Sauté onions and meat of your choice (I use bacon but sausage is good too) and add to beans. (3) Add salt, green chili and meat
